BRAISED TEOCHEW DUCK
Ingredients:1 whole duck (1.3 kg)2 tsp thick soya sauce1 ½ tsp cornflour1 tbs waterA: 20 g ginger (sliced)50 g galangal root (sliced)6 cloves2 star anise2 cm cinnamon stick2 ½ tbs oyster sauce1 tsp sugar2 tsp wine1 tsp salt1 cup waterMethod:Rub thick soya sauce all over the duck and leave to dry.Conventional way: Deep fry duck for 5 minutes and split duck at breast and spread open. Place duck in a dish.Combined ingredients A and pour over duck.Cover tightly with plastic wrap and cook on Microwave power Medium-High for 30 minutes or until duck is done.At half time, turn duck over, recover and cook for remaining time.Thicken gravy with cornflour mixture.Serve braised duck hot.Makes: 4-6 servingsTaken from “National Microwave/Convection Cookbook
