Empress Smoked Chicken
Ingredients:1kg chicken portions2tbs peppered season allA:1tsp dark soya sauce¼ tsp mixed spiceB:100g sugar40g tea leaves1tbs sesame oilGarnishing:1 tomato sauce, cut into slices½ cucumber, cut into slicesMethod:1. Clean, pat dry chicken portion and prick with fork on the skin. Set aside.2. Place peppered season all in a microwave safe dish, toss on power High for about 1 minute.3. Marinate chicken portions with peppered season all and A, inside and outside chicken. Leave to marinate overnight or at least 4 hours.4. Place a large piece of greased proof paper on a flat microwave safe dish. Sprinkle B over paper. Place a rack over B and place marinated chicken o rack. Bring greases proof paper over chicken and fold together to seal.Makes: 4-6 servingsTaken from "National Microwave/Convection Cookbook
