GINGER DUCK

Ingredients:A: 80 g young ginger, sliced30 g soya bean paste10 g garlic (chopped)2 tbs cooking oilB: 500 g duck pieces (remove skin and fat)1 cup water1 ½ tbs dark soya sauce1 tbs cornflour2 tbs water mixed together sugar, salt, pepper to tasteMethod:Stir fry ingredients A in a casserole, uncovered on Microwave power High for 5 minutesAdd ingredients B, mix well, cook covered on power High for 8 minutes.Continue to cook duck on power Medium - Low for 45 minutes.Serve ginger duck hot with rice.Makes: 4-6 servingsTaken from "National Microwave/Convection Cookbook
