Otak-Otak
Ingredients:400g tenggiri fish (deboned, skinned and divided into 4 portions)4pcs banana leaf (each 29cm x 28cm)A: (to be blended with 3tbs, oil)160g big union20g ginger10g dried chilli (soaked)15g candle nuts15g turmeric10g garlic10g galangal rootB:2g kadok leaves (whole)2g kadok leaves (finely sliced)2g lime leaves (finely sliced)90g thick coconut milk2 eggs (slightly beaten)1tsp saltMethod:1. Fry blended ingredients A in a casserole, stirring frequently, on power High, uncovered for 9 minutes.2. Cool fried ingredients, stir in ingredients B and divide mixture into 4 portions.3. Spread some mixture on a banana leaf, place 1 portion of fish on mixture and cover fish with more mixture. Fold up banana leaf and secure with toothpick. Repeat process till all fish and mixture are used up.4. Place wrapped fish in an oval dish and cover with plastic wrap.5. Cook on power Medium-High for 8 minutes.
